Some time ago we read in a dusty Touring magazine (Le Vie d'Italia), an illuminating passage for us of an article edited by Alessandro Cruciani who, in 1955 wrote about gastronomy: «It is true that it is an art - and very noble in addition - therefore, like any art, an artifice. But not every trick to be such is necessary for it to be complex and elaborate. A truly worthy gastronomist would be today those who were able to suggest a series of simple, practical and easy and ready to cook culinary recipes; who taught how to do well, which is very difficult, even the most common dishes; who would guide our housewives almost daily to the market and tell them which to choose and the best use to be drawn from the various products that it offers in the succession of the seasons ..... since, given the particular configuration of our country, we have the privilege of to always be able to integrate agricultural products from the north with those from the south and vice versa ».
