Ricetta: Spaghetti aglio, olio e peperoncino / Recipe: Spaghetti with garlic, oil and chili

Uno dei primi piatti piĆ¹ famosi della cucina tradizionale italiana. Uno spaghetto veloce e saporito adatto davvero a tutte le occasioni, da un pranzo veloce in solitaria ad una spaghettata di mezzanotte insieme agli amici.


Ingredienti per 4 persone
350 gr di spaghetti
4 cucchiai di olio extravergine d'oliva
1 spicchio d'aglio
peperoncino
1 ciuffo di prezzemolo
sale q.b.

Preparazione
Mettere sul fuoco una pentola colma d'acqua e portarla a bollore, quindi salare adeguatamente e tuffare gli spaghetti. Mentre gli spaghetti cuociono, fare scaldare un bel giro d'olio extravergine d'oliva in una padella piuttosto ampia, servirĆ  per spadellare gli spaghetti alla fine della ricetta. Aggiungere un peperoncino piccante all'olio e fare prendere calore. Nel frattempo affettare finemente l'aglio e tritare il prezzemolo. Quando l'olio inizierĆ  a sfrigolare e si formeranno delle bollicine intorno al peperoncino, togliere la padella dal fuoco e aggiungere l'aglio ed il prezzemolo.
In questo modo l'olio si aromatizzerƠ ugualmente e si eviterƠ di bruciare l'aglio. Un minuto prima del termine della cottura degli spaghetti, riaccendere il fuoco sotto la padella con il condimento, togliere il peperoncino e trasferirvi la pasta scolata. Spadellare la pasta aggiungendo poca acqua di cottura della stessa ricca di amido affinchƩ si possa creare una bella cremina.

4 spoons of extra virgin olive oil
1 clove of garlic
chili pepper
1 sprig of parsley
salt to taste

Preparation
Put a pan full of water on the fire and bring it to a boil, then salt and dip the spaghetti properly. While the spaghetti are cooking, heat a nice round of extra virgin olive oil in a fairly large pan, it will be used to sautƩ the spaghetti at the end of the recipe. Add a hot pepper to the oil and let it take heat. In the meantime, finely slice the garlic and chop the parsley. When the oil starts to sizzle and bubbles form around the chilli pepper, remove the pan from the heat and add the garlic and parsley.
In this way the oil will aromatize equally and you will avoid burning the garlic. A minute before the end of the cooking of spaghetti, turn the heat back on under the pan with the seasoning, remove the chilli pepper and transfer the drained pasta. SautƩ the pasta by adding a little cooking water of the same rich in starch so that you can create a nice creamy sauce.
