Sulle colline del Sannio, nella provincia beneventana, da quasi un secolo, si produce una pasta artigianale con lenta essiccazione a basse temperature, selezionando materie prime di qualità e utilizzando l’acqua di sorgente che sgorga direttamente nelle valli del Monte Taburno. Abbiamo intervistato Francesca Ibelli, titolare del Pastificio Pastai Sanniti di San Giorgio del Sannio (BN).


Come nasce il vostro pastificio ?
Pastai Sanniti nasce grazie alla nostra lunga tradizione familiare, terza generazione di pastai in Benevento. Abbiamo cercato di dare una nuova linfa all’esperienza quasi centenaria.

Qual è stato il primo formato di pasta prodotto ?
Il primo è stato il pacchero, il formato più complicato da produrre e su cui testare la qualità di un’intera produzione.

Ognuno ha il suo formato di pasta preferito. Qual è il suo e con quale condimento ama abbinarlo ?
Il mio formato preferito è il sedano rigato condito con un semplice sughetto al pomodoro fresco e basilico.

Qual è la fase più complicata e delicata nel produrre la pasta e quale, invece, dà maggiore soddisfazione ?
Senza alcun dubbio l’essiccazione anche in termini di soddisfazione. Non esiste un corso o una formula esatta che insegni o indichi come farla ma solo con l’esperienza, il lavoro, la dedizione è possibile individuare gli equilibri giusti per una corretta essiccazione.

Dove viene coltivato il grano duro utilizzato per la produzione della vostra pasta ?
La semola di grano duro che utilizziamo è 100% italiana di filiera certificata e controllata Prime Terre.

Come e perchè nasce la vostra linea di “pasta stregata” ?
Nasce dalla volontà di coniugare le eccellenze del nostro territorio di cui umilmente cerchiamo di essere portavoce, esplicativo in questo senso è il nostro marchio, e nasce dal proporre un prodotto innovativo mai visto prima.

Il segreto della vostra pasta ?
E’ un segreto, appunto! : ) Ogni produttore ha il suo, per questo ogni produzione è differente dalle altre.

L'art.7 del nostro Manifesto costitutivo recita: “La Compagnia promuove l'uso ed il consumo della "bistrattata" pasta liscia”. Quanto condivide questo nostro dettame ?
Condivido pienamente, soprattutto perché talvolta il termine liscio assume quasi un’accezione negativa. In realtà la pasta nasce liscia e poi la nostra è talmente ruvida che fa scordare le righe anche ai più testardi amanti della pasta rigata.

Cosa pensate del rapporto sempre più stretto che si è venuto a creare tra le aziende del settore alimentare ed i food blogger ?
Penso sia una ottima opportunità per le aziende del settore. I social in generale sono quanto di più democratico esista oggi nella promozione aziendale.

Quanto siete legati al vostro territorio ed in che modo la vostra azienda ha contribuito alla sua crescita ?
Il legame è forte e speriamo che la nostra azienda abbia dato e dia un contributo alla crescita del nostro territorio. Per noi è un onore esportare il Sannio e farlo conoscere come terra incontaminata, semplice, ricca di storia e di eccellenze.

Durante l'emergenza Covid-19 quali tipi di ordini sono cresciuti nella vostra azienda ?
Sicuramente gli ordini Online. Il nostro E-Shop offre la possibilità di scegliere tra una vasta gamma di formati.

Quali i progetti futuri ?
Incrementare certamente la presenza online potenziando il nostro Shop e la sua promozione e poi una nuova linea di formati.


On the hills of Sannio, in the province of Benevento, for almost a century, artisanal pasta has been produced with slow drying at low temperatures, selecting quality raw materials and using spring water that flows directly into the valleys of Monte Taburno. We interviewed Francesca Ibelli, owner of the Pastificio Pastai Sanniti in San Giorgio del Sannio (BN).

How was your pasta factory born?
Pastai Sanniti was born thanks to our long family tradition, the third generation of pasta makers in Benevento. We tried to give new life to the almost centennial experience.

What was the first pasta shape produced?
The first was the pacchero, the most complicated format to produce and on which to test the quality of an entire production.

Everyone has their favorite pasta shape. What is yours and which condiment do you like to combine it with?
My favorite format is celery striped with a simple sauce of fresh tomato and basil.

What is the most complicated and delicate phase in making pasta and which, on the other hand, gives the most satisfaction?
Without a doubt, drying is also in terms of satisfaction. There is no exact course or formula that teaches or indicates how to do it, but only with experience, work and dedication is it possible to identify the right balance for proper drying.

Where is the durum wheat used for the production of your pasta grown?
The durum wheat semolina we use is 100% Italian from a certified and controlled Prime Terre supply chain.

How and why was your line of “witch pasta” born?
Born from the desire to combine the excellence of our territory of which we humbly try to be spokesperson, our brand is explanatory in this sense, and comes from proposing an innovative product never seen before.

The secret of your pasta?
It is a secret, in fact! :) Each producer has his own, so each production is different from the others.

Article 7 of our Constitutive Manifesto states: “The Company promotes the use and consumption of the" mistreated "smooth pasta". How much do you share this dictate of ours?
I fully agree, especially since sometimes the term smooth almost takes on a negative meaning. In reality the pasta is born smooth and then ours is so rough that even the most stubborn lovers of striped pasta forget the lines.

What do you think of the increasingly close relationship that has been created between companies in the food sector and food bloggers?
I think it is an excellent opportunity for companies in the sector. Social media in general are the most democratic thing in business promotion today.

How connected are you to your territory and how has your company contributed to its growth?
The bond is strong and we hope that our company has made and will contribute to the growth of our territory. For us it is an honor to export Sannio and make it known as an uncontaminated land, simple, rich in history and excellence.

During the Covid-19 emergency what types of orders grew in your company?
Online orders for sure. Our E-Shop offers the possibility to choose from a wide range of formats.

What are the future projects?
Certainly increase the online presence by enhancing our Shop and its promotion and then a new line of formats.
